This is my mom’s recipe and it used to be my favourite meal when I was younger. Every time I was ill, she would make it for me and it would make me feel better straight away.
Ingredients: – 3 White onions – Sliced white bread – 1 cup all purpose flour – 3 eggs – cheese – 1 L vegetable stock – 1 cup white wine (optional)
Heat oil in a frying pan and lightly brown the onions. Then add 1 Litre of water and 2 tsp/one cube of vegetable stock and bring to a boil. Add 1 cup of white wine if desired.
In the meanwhile put the sliced cheese on the bread slices and prepare sandwiches. Cut these in half and lather in egg and then flour prior to frying it in plenty of oil until golden brown. Make sure the bread has plenty of egg all over before covering it in flour.
When everything is done, place your cheesy bread in a soup bowl and cover in onion soup. Enjoy!
